In many Christian traditions, the 40 days preceding Easter are holy days of reflection, fasting and personal sacrifice. On the days just before Lent begins, Scandinavian countries celebrate with cream-filled sweet rolls. Danes and Icelanders top theirs with chocolate, Norwegians often include jam with the cream, and Swedes enjoy rolls with marzipan and cream. However you eat them (or no matter what you call them), they are an indulgent tradition before a period of fasting and restraint.
